This perfect quick banana muffin recipe will appeal to anyone who loves to treat their loved ones to fragrant, freshly baked treats in the morning—they take less than half an hour to make. For the batter, you'll need overripe bananas—those unappetizing ones that have been sitting around, turning brown, and you're loath to throw them away—they've had their day! Mash some bananas and leave them in chunks, while whip the rest until smooth with the other ingredients. Mix chopped pecans into the batter—a perfect complement to the banana. Bananas not only infuse the muffins with their wonderful aroma and flavor, but also make them extra moist.


Ingredients:

  • 2 cups premium flour
  • 1.5 tsp of baking soda
  • 0.5 tsp salt
  • 4 overripe bananas
  • 1 cup brown sugar
  • 165g unsalted butter, melted and cooled
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.5 cup chopped pecans
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C and lightly grease 2 metal muffin tins with butter.
  • Step 2
  • In a large bowl, combine the flour, baking soda, and salt; set aside. In a small bowl, mash 2 bananas with a fork until they're still in small chunks. Using an electric mixer fitted with a whisk attachment, beat the remaining bananas with the sugar for a full 3 minutes. Add the melted butter, eggs, and vanilla and beat well, scraping down the sides of the bowl once or twice. Fold in the dry ingredients.

  • Using a rubber spatula, fold in the nuts and mashed bananas. Spoon the batter into the muffin tins, filling them about halfway. Tap the tins on the counter to release any air bubbles.

  • Bake until a toothpick inserted into a muffin comes out clean, 18-20 minutes. Let cool for a few minutes, then remove from the pan. Serve warm or at room temperature.
