These amazing muffins combine the tenderness of bananas with the crunch of granola and walnuts. Some bananas are mashed into the batter, while others are sliced. Add granola, chopped nuts, and coconut to the batter along with the bananas and bake in muffin tins. You can also top them with dried bananas, granola, and coconut for an even more contrasting texture. You'll love the softness, moistness, and flavor that bananas impart to these muffins. Ingredients:

  • 3 cups of flour
  • 2 tbsp. sugar
  • 2 tsp baking powder
  • 1 teaspoon of baking soda
  • 0.5 tsp salt
  • 220 g butter, melted and cooled
  • 2 large eggs
  • 3/4 cup whole milk
  • 2 tsp vanilla extract
  • 1 cup mashed ripe bananas (2 bananas)
  • 1 cup ripe bananas, cut into medium cubes (1 banana)
  • 1 cup chopped walnuts
  • 1 cup granola
  • 1 cup sweet coconut flakes
  • Banana chips, granola or coconut flakes (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C.
  • Step 2
  • Line 18 large muffin tins with paper liners. In the bowl of an electric mixer fitted with a paddle attachment, sift together the flour, sugar, baking powder, baking soda, and salt. Add the melted butter and mix. Combine the eggs, milk, vanilla, and mashed bananas and fold into the batter. Scrape down the sides of the bowl and combine. Do not overmix the batter.

  • Stir diced bananas, walnuts, granola, and coconut into the batter. Pour the batter into paper muffin cups, filling them to the very top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25-30 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean. Cool slightly, remove from the cups, and serve.
