Ingredients:

  • 2/3 cup corn flour
  • 1/3 cup premium flour
  • 1 teaspoon baking powder
  • 3/4 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1/2 cup finely chopped onion
  • 1/3 cup milk
  • 2 large eggs, lightly beaten
  • 2 tbsp. l. melted butter
  • Vegetable oil, for greasing the pan
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 230 C. Grease a baking pan with 24 small round indentations with vegetable oil.
  • Step 2
  • In a medium bowl, combine cornmeal, wheat flour, baking powder, salt and pepper.
  • Step 3
  • In a separate bowl, combine the onion, milk, eggs, and butter. Pour the egg mixture into the flour mixture and stir with a spoon.
  • Step 4
  • Spoon 1 tablespoon of batter into each well in the pan. Place in the oven and bake the corn muffins until golden brown, about 10 minutes.
