Savory muffins are perfect for breakfast. For example, these almond muffins feature fried pork sausage, plenty of cheddar, and green onions—just the thing for a delicious, filling breakfast! They also make a great snack throughout the day.

Ingredients:

  • 6 tbsp unsalted butter (melt and let cool) + extra for greasing pan
  • 1.5 cups almond flour
  • 2 tsp baking powder
  • 0.5 tsp coarse salt
  • 1/8 tsp cayenne pepper
  • 1/8 tsp dried sage
  • 1/2 cup crumbled fried pork breakfast sausage
  • 0.5 cups grated sharp cheddar
  • 1 finely chopped green onion
  • 3 tablespoons heavy cream
  • 2 large eggs
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C. Grease 8 muffin tin cups.
  • Step 2
  • In a medium bowl, combine the almond flour, baking powder, salt, cayenne pepper, and sage. In a large bowl, combine the sausage, cheddar, and green onions. In a small bowl, combine the cream and eggs, then add them to the large bowl with the meat mixture. Add 6 tablespoons of melted butter and the almond flour mixture and stir to combine.

  • Spoon the batter into a greased muffin pan. Bake until the muffins are golden brown and a toothpick inserted into the center comes out clean, about 15 minutes.
