Banana gives these muffins not only a tender and moist texture but also a wonderful aroma that will whet your appetite while they're still in the oven. They're quite simple and quick to make, and for a more festive look, top them with a drizzle of cream cheese frosting and walnuts, and you've got delicious cupcakes.


Ingredients:


Muffins
  • 3 cups of flour
  • 1 teaspoon baking soda
  • 1 teaspoon of salt
  • 0.5 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 2 tbsp. sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 tbsp vanilla extract
  • 4 ripe bananas, peeled and coarsely mashed

Glaze
  • 90 g of cream cheese, room temperature
  • 85 g butter, room temperature
  • 1/3 cup mascarpone cheese, room temperature
  • 3 tablespoons of honey
  • 0.5 cups chopped toasted walnuts
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Line 18 muffin tins with paper liners. Preheat oven to 325°F (160°C).
  • Step 2
  • In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon, and nutmeg. In a large bowl, whisk together the sugar, vegetable oil, eggs, and vanilla. Stir in the bananas. Add the dry ingredients and mix until smooth.
  • Step 3
  • Pour the batter evenly into the prepared pans. Bake the muffins on the middle rack of the oven until golden brown and a tester inserted into the center comes out crumb-free, about 25 minutes. Transfer the muffins to a cooling rack. Enjoy warm, cool completely, or freeze.
  • Step 4
  • Frost the cupcakes: Using a mixer, beat the cream cheese and butter in a large bowl until light and fluffy. Beat in the mascarpone cheese, then the honey. Spread the glaze on the muffins. Sprinkle with walnuts.
