Ingredients:

  • 1 package (470 g) banana-nut cake mix
  • 3/4 cup semi-sweet, heat-stable chocolate chips in small drops
  • 3/4 cup chocolate milk
  • 1/4 cup cocoa powder
  • 1/2 - 1 tsp banana extract
  • 3/4 cup banana chips
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 3/4 cup powdered sugar, sifted
  • 2 - 3 tbsp. heavy cream
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 180°C. Grease two rectangular (15 x 7.5 cm) muffin tins with vegetable oil.
  • Step 2
  • Place banana chips in a large plastic bag. Press out any air and seal tightly. Using a rolling pin, finely crush the chips.
  • Step 3
  • In a large bowl, combine the baking mix and cocoa powder. Add the chocolate milk, vegetable oil, and eggs, and mix until smooth.

    Stir in crushed banana chips and chocolate chips. Pour the batter into the molds.
  • Step 4
  • Bake cupcakes for 50-55 minutes. You can check for doneness by inserting a toothpick into the center of the cupcake; the toothpick should come out clean and dry.

    Cool, then remove the cupcakes from the pans.
  • Step 5
  • Meanwhile, prepare the glaze: Mix powdered sugar, cream and banana extract in a bowl.

    Drizzle the glaze over the cupcakes and let them set.
