These simple and delicious muffins are quick to make and fly off the table even faster. The dough is mixed by hand, without a mixer, using flour, sugar, eggs, milk, and butter, just until all the ingredients are incorporated. Fresh strawberry pieces keep the muffins moist and, together with spicy cinnamon, give them a wonderful summer flavor and aroma. A perfect treat with tea.


Ingredients:

  • 3 cups of flour
  • 1 tbsp baking powder
  • 0.5 tsp of soda
  • 0.5 tsp coarse salt
  • 1.5 tbsp. ground cinnamon
  • 1 and 1/4 cups milk
  • 2 large eggs, lightly beaten
  • 220 g butter, melted
  • 2 cups fresh strawberries, diced
  • 1.5 cups of sugar
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 190°C. Line metal muffin tins with paper liners.
  • Step 2
  • In a large bowl, sift the flour, baking powder, salt, and cinnamon. Mix by hand until evenly distributed. In a 0.5-liter measuring cup, combine the milk, eggs, and melted butter. Make a well in the center of the dry mixture, pour the liquid mixture into it, and stir to form a dough. There will be some lumps in the dough, but do not overmix it! Add the strawberries and sugar and mix gently.
  • Step 3
  • Using a 6-cm ice cream scoop, scoop the batter into the paper cupcake liners. Bake for 20-25 minutes, until a tester inserted into the cake comes out clean and the tops are golden brown.
