Bright red strawberries filled with a green, snow-like mass look like a treat from a fine dining restaurant. And the combination of flavors in this summer appetizer will be appreciated by any gourmet. Large strawberries are trimmed to stand up straight like bowls and filled with basil granita. To make the granita, basil leaves are simmered in a simmering mixture of sugar syrup, white wine, and apple juice, then the entire mixture is blended and frozen. You'll be amazed at how the flavors of juicy strawberries and basil combine so beautifully, harmoniously, and so summery. Assemble the dessert just before serving.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 16 large strawberries
  • 1 cup of sugar
  • 1/4 cup apple juice
  • 1/4 cup sparkling white wine
  • 1 cup basil leaves

Cooking the dish according to the recipe:


  1. Prepare sugar syrup: Combine sugar and 1 cup water in a saucepan and heat over medium-low heat, stirring until sugar dissolves.
  2. In a saucepan, combine 1 cup of sugar syrup, juice, and wine and bring to a boil over high heat. Carefully pour into a blender, add the basil, and blend until smooth (leave the lid slightly ajar while blending to allow steam to escape).

  3. Strain the basil syrup through a fine-mesh sieve into a 20cm square metal container. Freeze for 3-4 hours, scraping the mixture with a fork every 20 minutes to create a fluffy consistency. Store in the freezer until ready to serve.
  4. Cut the tops off the strawberries and trim the tips so they stand upright. Using a small spoon, scoop out the flesh of each strawberry to create small bowls. Fill them with granita.

    Serve immediately.
