Ingredients:
- 1 cup hulled strawberries + 12 large berries
- 3/4 cup rosé wine
- 2 tbsp. ultrafine sugar
- Fresh mint, for serving
- Special equipment: a small watermelon spoon and a fine sieve

Preparation:
- Step 1
- Place the hulled strawberries in a bowl and set aside. Cut off and discard the tops of 12 large strawberries and trim the bottoms so they stand upright. Using a small watermelon scoop, scoop out the flesh from each strawberry to create small bowls, placing the flesh in the bowl with the strawberries. Wrap and store the berry bowls in the refrigerator until ready to assemble. Step 2
- Combine the wine, sugar, and strawberries in a blender and blend on high speed until smooth. Strain through a fine-mesh sieve into an 8-inch square metal pan. Freeze for 3-4 hours, scraping the mixture with a fork every hour to make it slushy. Wrap and freeze until ready to serve. The granita can be made a day ahead and stored overnight. Step 3
- Remove the strawberry bowls from the refrigerator and spoon granita into each, topping with a sprig of mint. Store the strawberry bowls and granita in the freezer while you gather the remaining berries.
