This Italian granita, similar to a fruit ice, is a light and refreshing treat that's a delightful treat in the summer heat. Cranberry granita is made with cranberry juice mixed with sugar, lime juice, and a splash of vodka. Unlike classic homemade ice cream, this dessert is convenient because it doesn't require an ice cream maker. The basic principle is to scrape the granita with a fork every hour while freezing, allowing it to harden into a snow-like mass. The flavor of cranberry granita is invigorating, vibrant, and balanced. Serve garnished with fresh cranberries.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 cups cranberry juice
  • 1/3 cup sugar
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup vodka
  • 6 fresh cranberries, for serving

Cooking the dish according to the recipe:


  1. In a medium, heavy-bottomed saucepan, combine the cranberry juice and sugar and heat over medium heat until the sugar dissolves. Pour the cranberry mixture into a 9 x 13 x 2-inch glass baking dish. Cool completely. Stir in the lime juice and vodka. Freeze for about 2 hours, until the granita is slushy. Stir with a fork. Continue freezing the granita, stirring every hour to form crystals. Freeze for at least 5 hours, or overnight.
  2. Divide the granita among 6 bowls. Garnish with fresh cranberries, if desired, and serve.
