Make a refreshing frozen dessert inspired by the popular Caribbean cocktail, the Pina Colada. This granita is light and low-calorie, unlike traditional ice cream, and its tropical flavor is pleasantly refreshing in hot weather. Blend chopped pineapple with coconut water and coconut cream in a blender, then freeze the mixture, scraping it regularly with a fork until it's fluffy and easy to scoop and eat with a spoon. For a more adult flavor, drizzle each serving of granita with rum before serving and enjoy your frozen Pina Colada.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 cups diced pineapple
  • 1 cup coconut water
  • 1/4 cup coconut cream

Cooking the dish according to the recipe:


  1. Combine the pineapple, coconut water, coconut cream, and a pinch of salt in a blender and blend until smooth. Strain through a fine-mesh sieve into an 8-inch (20 cm) square stainless steel or glass baking dish.
  2. Freeze until ice crystals begin to form around the edges, about 45 minutes. Using a fork, scrape the frozen portion toward the center of the pan. Continue freezing, scraping every 30 minutes, until completely frozen, about 4 hours.
