We recommend

Preparation:

    Step 1
  • Add coconut milk, coconut cream, and agave syrup to a blender and blend until smooth, about 20 seconds.
  • Step 2
  • Add the pineapple chunks and lime juice to a blender and blend until smooth, another 30–45 seconds. Then add ice and non-alcoholic rum, if using, and blend until smooth and creamy. Pour into two daiquiri glasses and garnish each with a pineapple wedge.

    Lime ice:

If you have limes or lemons that are about to spoil (or you just have a lot of them), juice them and freeze them in ice cube trays. A standard ice cube tray contains about 2 tablespoons (30 ml) of juice, making it easy to measure out into cocktails. This is a great way to prepare ahead and preserve precious juice.
