In a blender, blend 6 cups of seedless watermelon pulp with 1/2 cup of sugar, 1 tablespoon of lime juice, and 2 teaspoons of grated peeled ginger until smooth. Pour into a shallow 9-13 inch baking dish, cover with plastic wrap, and freeze, scraping the mixture with a fork every hour, until fluffy, 5-7 hours.
