Carrots impart a vibrant orange color and are blended with the other ingredients to create a smooth, tangy, and well-balanced vinaigrette. Apple acts as an unexpected natural sweetener, and miso adds complexity. Be sure to look for white miso paste: its flavor is milder and sweeter than other miso pastes, and its color won't affect the color of your dressing.

Ingredients for the recipe:
- 1 large carrot, peeled and coarsely chopped (about 100g)
- Half a red apple, such as Gala, Honeycrisp or Fuji, peeled and coarsely chopped (about 100g)
- 4 cm ginger root, peeled and coarsely chopped
- 1 clove garlic, peeled
- 1/4 cup white miso paste
- 1/4 tbsp. rice vinegar without additives
- 3 tablespoons dark sesame oil
- Coarse salt and freshly ground black pepper

Cooking the dish according to the recipe:
- Place carrots, apple, ginger, garlic, miso, rice vinegar, sesame oil, 1 teaspoon salt and 1/4 teaspoon black pepper in a blender.
- Blend until smooth. If necessary, stop the blender and scrape down the sides of the bowl with a silicone spatula to ensure the ingredients are completely combined.
