This tart vinaigrette with lemon juice and fresh herbs gets a sweet note from the addition of honey and pairs beautifully with almost any salad. Feel free to add any aromatic herbs you have on hand, such as dill, tarragon, parsley, or basil.

Ingredients:

  • 1/4 cup freshly squeezed lemon juice (from about 2 lemons)
  • 2 tbsp chopped fresh herbs
  • 1 tbsp. honey
  • 3/4 cup extra-virgin olive oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • In a small bowl, combine the lemon juice, herbs, honey, and a generous pinch of salt. Gradually whisk in the olive oil, starting with a few drops, then add the rest in a steady stream, whisking until you have a smooth, slightly thick dressing. Add a couple of turns of freshly ground black pepper.
