To keep your guests from going hungry while waiting for the big main course, whip up a quick appetizer salad called "Antipasto." Boiled pasta is mixed with a variety of diced Italian delicacies, including salami, smoked turkey, provolone cheese, Asiago cheese, green olives, and roasted bell peppers (canned is fine). All the ingredients are tossed with a tart vinaigrette. This salad is perfect for picnics and will help while the meat is grilling, and it's also travel-friendly: the dressing can be carried in a separate container. Serve as a refreshing drink. soda for a large company.


Ingredients:


Antipasto Salad
  • 450 g fusilli pasta (spirals)
  • 0.5 cups hard salami, cut into strips (about 80 g)
  • 1/2 cup smoked turkey, cut into strips (about 80 g)
  • 1/4 cup provolone cheese, cut into strips
  • 1/4 cup grated Asiago cheese
  • 2 tablespoons green olives, pitted, halved
  • 2 tablespoons roasted sweet red peppers, cut into strips
  • 1/4 teaspoon salt
  • 0.5 tsp freshly ground black pepper

Vinaigrette dressing
  • 1 bunch fresh basil, leaves chopped only (about 2 cups)
  • 1/4 cup red wine vinegar
  • 1 clove of garlic
  • 1 teaspoon Dijon mustard
  • 0.5 tsp salt
  • 0.5 tsp freshly ground black pepper
  • 3/4 cup extra-virgin olive oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Vinaigrette dressingIn a blender, combine the basil, vinegar, garlic, mustard, salt, and black pepper. Blend until the herbs are finely chopped. With the blender running, pour in the olive oil until the dressing is smooth.
  • Step 2
  • Bring a large saucepan of salted water to a boil over high heat. Add the fusilli pasta and cook, stirring occasionally, until al dente, 8-10 minutes. Drain.
  • Step 3
  • In a large bowl, combine the cooked pasta with the remaining salad ingredients. Drizzle with the dressing and toss to coat evenly. Serve.
