Why eat salad with a fork when you can scoop it up with pita chips? That's the whole idea behind this crisp, appetizing salad, filled with finely chopped, colorful summer vegetables and dressed with a velvety tahini-based sesame-based dressing.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Salad

  • 340 g radishes, diced (about 2 bunches)
  • 2 cups boiled corn kernels (from about 4 ears, or from canned corn)
  • 3 tablespoons finely chopped fresh parsley
  • 4 mini cucumbers (ends trimmed), finely chopped (2 cups)
  • 3 green onions, chopped (0.5 cup)
  • 2 medium tomatoes, seeded and diced (about 450g)
  • Half a red onion, diced (0.5 cup)

Dressing for appetizer salad

  • 1/4 cup freshly squeezed lemon juice
  • 1 teaspoon of honey
  • 1 clove of garlic, grated
  • 0.5 cups well mixed tahini paste
  • 1/4 cup cold water
  • 1/4 tsp ground cumin
  • A pinch of cayenne pepper
  • Coarse salt and freshly ground black pepper

Cooking the dish according to the recipe:


  1. Salad:

    In a large bowl, combine radishes, corn, parsley, cucumbers, green onions, tomatoes, and red onion.
  2. Tahini sesame paste dressing:

    In a medium bowl, combine the lemon juice, honey, and garlic. Gradually stir in the tahini. Stir in the water a little at a time until the sauce is smooth. Stir in the cumin, cayenne pepper, and 1/4 teaspoon of salt. Taste and add more salt if desired.

  3. Drizzle the dressing over the salad and toss thoroughly with tongs; season with salt and pepper to taste. Serve the appetizer salad with pita chips for scooping.
