Marinated vegetables, fresh salad greens, and tender mozzarella make this Italian salad a veritable riot of flavors. Use not only the vegetables from the giardiniera jar but also the brine for a delicious, tart dressing.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Cooking the dish according to the recipe:
- In a large bowl, combine 3/4 cup giardiniera (Italian pickled vegetables), 4 ounces shredded fresh mozzarella, 4 cups Italian mixed greens, 1/2 cup torn basil, and 2 tablespoons chopped parsley.
- Combine 1 tablespoon each of white wine vinegar and giardiniera brine, then slowly stir in 3 tablespoons of olive oil; drizzle the dressing over the salad and toss. Season with salt and pepper to taste.
