Time: 3 hours 25 minutes
Complexity: easily
Quantity: 2 loaves

This Italian Christmas cake is made with a dry mixture that you can layer in a beautiful jar and give to loved ones with the recipe. Traditional panettone includes plenty of dried fruit—candied orange peel, dried cherries, raisins, and dried apricots. It's baked with yeast dough, so patience is required to let the dough rise well. The result will be fantastic: a fluffy, aromatic cake filled with moist fruit chunks.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

Mixture

  • 0.5 cup diced candied orange peel
  • 3/4 cup dried cherries
  • 3/4 cup golden raisins
  • 3/4 cup diced dried apricots
  • 0.5 cups of sugar
  • 1 tbsp. active dry yeast
  • 3.5 cups premium flour
  • 1 and 1/4 teaspoons salt
  • You will need: 2-liter glass jar

Recipe:

Place the dry Festive Panettone mix (see recipe below) in a bowl. Heat 1 cup whole milk, 110g butter, 1/4 cup honey, and 2 tablespoons grated lemon zest in a saucepan to 115°F (48°C); stir. Stir in 2 lightly beaten eggs and 1 teaspoon vanilla extract; cover and let rise until doubled in size, about 1 hour. Butter two 5x9-inch loaf pans or two empty 200ml coffee cans and line with parchment paper. Add the dough, cover, and let rise for another 1 hour. Bake at 350°F (175°C) until a toothpick inserted into the center comes out clean, about 55 minutes. Cool and slice.

Note
If you're giving this mixture to a nut lover, substitute 1/4 cup toasted pine nuts for some of the dried fruit.
