When ripe, juicy tomatoes, fresh basil, and high-quality, tender mozzarella come together on a plate, all that's left to do is drizzle the salad with aromatic olive oil. Italian Caprese salad exudes the vibrant flavors of each ingredient and their sumptuous combination. One of the simplest yet most delicious appetizers, it's considered a symbol of Italy. You can make a "lazy" Caprese with red or yellow tomatoes by simply mixing all the ingredients, or arrange them in a circle, alternating a red tomato slice, a slice of mozzarella, and a basil leaf, to mimic the Italian tricolor.

Recipe:
Slice the tomatoes and mozzarella and arrange them on a large plate with basil leaves. Drizzle with olive oil. Season with salt and pepper, and serve the salad on the eggplant slices at room temperature.
