  • 1 fennel root, quartered and thinly sliced
  • 1 cup grape tomatoes, halved
  • 3 tablespoons extra-virgin olive oil
  • Juice of 1 lemon
  • 60 g salami, thinly sliced
  • Grated Parmesan cheese, to sprinkle
