A recipe for a light salad made with vegetables and Mesclun salad mix. It's made by combining beets, radicchio, frisée, apples, and goat cheese, and dressing them with a vinaigrette. The salad is topped with pecans.

In a bowl, combine 1/2 head of chopped shallot, 1 teaspoon honey, 1 teaspoon grainy mustard and 2 tablespoons. sherry vinegarWhisking constantly, slowly pour in 3 tablespoons of olive oil, season with salt and pepper. Mix half the dressing with 4 cups of mesclun salad mix and divide between 2 servings.

Top with slices of fried beetroot and slices of apples. Granny Smith, sprinkle with crumbled goat cheese and chopped toasted pecans. Drizzle the remaining dressing over the salad.
