Sherry vinegar

Sherry vinegar is a mild vinegar of Spanish origin, produced by fermenting sherry wine and aging in oak barrels for two to fifteen years or more. The vinegar takes on an amber color, lending a matching hue to dishes.
In cooking, along with red and white wine vinegars Sherry wine can also be used. It can have both a rich, sweet and distinctly tart flavor. It's used in soups, sauces, and marinades.
