Ingredients:

  • 80 g thinly sliced ​​prosciutto or spicy smoked ham
  • 2 plums, cut into slices slightly larger than 1 cm.
  • 2 peaches, cut into slices slightly larger than 1 cm.
  • 80 g crumbled Gorgonzola cheese (or other blue cheese)
  • 8 cups chopped fresh herbs (parsley, mint)
  • 1/4 cup thinly sliced ​​red onion into half rings
  • 3 tbsp. l. olive oil
  • 2 tbsp. sherry vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 tsp salt

Preparation:

    Step 1
  • In a small skillet, fry the prosciutto in a tablespoon of olive oil over medium-high heat, about 1 minute per side. Drain on paper towels.

    Add the remaining 2 tablespoons olive oil, reduce the heat to medium, add the sherry vinegar, Dijon mustard and salt, season with pepper to taste, and stir until smooth.

    Then add the peaches, plums, and red onion to the pan and cook briefly until the onion is soft. Pour into a salad bowl.
