Salad with spinach, almonds, cherries, bacon and peaches

Transform a store-bought salad by adding grilled peaches and bacon to spinach for a perfect summer barbecue side dish. For this recipe, choose ripe but firm peaches so they caramelize well during grilling. Turkey bacon is a great low-calorie alternative to traditional bacon.

Ingredients:

  • 2 peaches
  • Olive oil for greasing
  • 1 package of spinach, dried cherry, almond and blue cheese salad mix
  • 4 slices turkey bacon, crispy and cut into 1cm pieces.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Halve the peaches and remove the pits. Slice into 0.5 cm thick slices. Brush with oil and grill on each side until grill marks appear. Let cool slightly and cut into pieces.
  • Step 2
  • Combine all salad ingredients, except the dressing, in a large bowl. Add the peaches and bacon and mix well. Add the dressing and toss. Serve with bread, if desired.
