Ingredients:

  • 4 slices bacon, cut into pieces
  • 3 tbsp. currants
  • 3 tbsp red wine vinegar
  • 2 tbsp. l. olive oil
  • Salt and freshly ground pepper
  • 1 head of Belgian endive, chopped
  • 1/4 cup chopped pistachios
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • Fry the bacon in a skillet until crisp, then transfer to a colander to drain. Combine the currants, red wine vinegar, olive oil, and bacon fat in a large salad bowl, and season with salt and pepper. Add the chicory and toss to combine. Sprinkle with the pistachios and bacon.
