This hearty German potato salad is bursting with the rich flavors of fried bacon and tart gherkins. The potatoes are boiled with the skins on (they contain many beneficial micronutrients, especially when they're new) and tossed in bacon fat with green onions, gherkins, and crispy bacon bits. A couple of tablespoons of white wine vinegar and Dijon mustard add extra flavor. Serve as a side dish with meat dishes, and it's especially delicious with pork.

Boil 1 pound diced red potatoes in salted water until tender; drain. Fry 4 slices finely chopped bacon until crisp; discard the rendered fat, reserving 2 tablespoons in the pan. Add 1 bunch chopped green onions; fry them. Stir in 1/4 cup water, 2 tablespoons white wine vinegar, and 2 teaspoons each Dijon mustard and sugar and bring to a boil. Stir in 1/4 cup each chopped parsley and gherkins, potatoes and bacon; season with salt and pepper to taste.
