Despite the simplicity of this salad and its limited number of ingredients, it's incredibly vibrant, both in flavor and appearance. Poppy seeds crunch delightfully against the tender red potato slices. And the dressing of chicken broth, dry white wine, red wine vinegar, and Dijon mustard imbues the salad with a riot of flavors. It's perfect for picnics and more formal occasions. Serve as a side dish with meat, poultry, or fish, and enjoy.
