When combined with dressing and spices, snow peas make a wonderful salad or vegetable side dish for meat. To achieve this, snow peas are blanched in boiling water for a couple of minutes to soften them slightly but still retain their juiciness and firmness. They are then tossed with a dressing of natural yogurt, olive oil, and lemon zest, and sprinkled with a mixture of poppy seeds, sesame seeds, and dried onions. The citrus flavor of the dressing will infuse the snow peas with even more freshness, and the small seeds will add a pleasant crunch.

Recipe:

In a large bowl, combine 3 tablespoons plain yogurt, 1 tablespoon olive oil, and 1 teaspoon grated lemon zest. Cook 1 pound sugar snap peas in salted boiling water until crisp-tender, about 2 minutes; drain. Toss the peas with the yogurt dressing and season with salt and pepper to taste. Sprinkle with 1 tablespoon poppy seed, sesame, and dried onion mixture.
