Melt 2 tablespoons (30 g) butter in a nonstick skillet over medium-high heat. Break up 1 cup egg noodles and add to the skillet. Cook, stirring, until golden, 3 to 5 minutes. Drain on paper towels and season with salt and pepper. Cook 1 pound (450 g) egg noodles according to package directions. Set aside 1 cup of the cooking liquid; discard the remaining water and return the noodles to the pan. Add 4 tablespoons (60 g) butter, 2/3 cup crème fraîche, 2 tablespoons chopped chives, 2 teaspoons poppy seeds, 3/4 teaspoon nutmeg, and 1/2 tablespoon of the cooking liquid. Stir until creamy, adding more water if necessary. Season with salt. Sprinkle fried noodles on top.
