One of the quickest and most delicious sauces for egg noodles is made with butter and the water in which the noodles were cooked. The butter will thicken the sauce nicely, and its rich flavor is nicely balanced by freshly squeezed lemon juice and fresh herbs like dill or parsley. Toss the cooked noodles with the sauce and serve immediately. Adults and especially children, who often dislike tomato sauces, will love it.

Recipe:


Cook 12 oz (340 g) of wide egg noodles in salted boiling water until al dente. Pour 1/4 cup of water into the pan. Stir in 4 tablespoons of butter, one knob at a time. Add some finely chopped parsley and/or dill, a squeeze of lemon juice, and season with salt and pepper. Drain the noodles and toss with the sauce.
