Drunken Noodles, or pad ki mao, is a popular Thai dish prepared using the stir-fry technique. The noodles are alcohol-free and likely got their name from their quick and easy preparation and often served with alcoholic beverages, as well as their spicy, invigorating flavor, which helps cure a hangover. Ingredients pad ki mao Shrimp, fried eggs, rice noodles, tomatoes, Thai basil, hot peppers, all in a spicy Asian sauce. Place all the prepared ingredients near the stove and begin frying, adding them one at a time and stirring constantly, in a hot pan.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Noodles

  • 4 cups fresh rice noodles, divided
  • 6-8 large shrimp, peeled and deveined
  • 3 tbsp. canola or peanut oil
  • 2 - 3 cloves of garlic, crushed
  • 2 large eggs
  • 1 - 2 serrano peppers, thinly sliced
  • Half a medium white onion, thinly sliced
  • 1 cup Thai basil leaves
  • 0.5 cup chopped bell pepper

Sauce

  • 2 tbsp sweet soy sauce
  • 1 tbsp oyster sauce
  • 1.5 tbsp fish sauce
  • 1 tbsp. sugar
  • 1 tsp. sriracha sauce
  • 1 teaspoon crushed garlic
  • 6 - 8 Thai basil leaves, thinly sliced

Cooking the dish according to the recipe:


  1. Heat vegetable oil in a large skillet over high heat. When white smoke appears, add the garlic and cook, stirring, until golden. Add the eggs and serrano chile and cook, stirring, until the eggs are slightly set, about 1 minute. Add the shrimp and onion, stirring constantly until the shrimp are pink, about 1 minute.
  2. Combine all sauce ingredients in a small bowl. Add the noodles, basil, bell pepper, and sauce to the pan and stir for about 3 minutes. Be sure to scrape up any browned bits from the bottom before they burn. Cook for another minute, until the noodles are cooked through and well coated with the sauce. Serve hot.
