Drunken chicken is a fun and relatively simple technique for cooking a whole chicken. An open beer can is inserted into the cavity and the chicken is grilled vertically. This method promotes even cooking, infusing the chicken with the wonderful aroma of hops and spices, making it especially juicy. For added flavor, add a sprig of fresh rosemary to the beer. The chicken itself is simply rubbed with seasoned salt and Paula Deen's signature seasoning of salt, black pepper, and garlic powder. The spice ratios for this homemade seasoning are listed at the end of the recipe. Store any leftovers in a jar and use them in other dishes.


Ingredients:


Chicken
  • 1 chicken weighing 1.3 kg.
  • Seasoned salt
  • Homemade seasoning, recipe below
  • 1 can of beer (0.33 l)
  • 1 sprig of rosemary

Homemade seasoning
  • 1 tbsp. salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat a charcoal grill to high heat. Once the coals are hot, carefully push them toward the sides of the grill, leaving a clear space in the middle.
  • Step 2
  • Wash and dry the chicken. Rub the chicken inside and out with seasoned salt and homemade seasoning. Open a can of beer and carefully insert a sprig of rosemary.

    Homemade seasoning: Mix all ingredients and store in an airtight container for up to 6 months.
  • Step 3
  • Next, thread the chicken onto the beer can. Carefully place the chicken in the center of the grill, breast-side down on one of the coals, being careful not to spill the beer. Cover the grill and roast until the chicken is cooked through, 45 minutes to 1 hour, turning the chicken as needed. The chicken is done when the juices run clear when pierced.

  • Serve the chicken with your favorite side dishes.
