Cooking the dish according to the recipe:
- Preheat an outdoor grill to medium-high heat. Make sure the grates are clean to prevent the chicken from sticking.
- Place the chicken breasts between two sheets of plastic wrap. Pound with a small frying pan or a meat mallet until the chicken is 0.5 cm thick. Remove the wrap and transfer to a baking sheet. Pound the remaining breasts in the same manner. Lightly brush both sides of each chicken cutlet with oil.
- Combine salt, pepper, and garlic powder in a small bowl and sprinkle evenly over both sides of the chicken cutlets. Place the cutlets on the grill grate and cover. Grill for 3–4 minutes.
- Flip and brush each cutlet with a few tablespoons of marinara sauce, then top with a couple of slices of mozzarella and 1 tablespoon of Parmesan cheese. Cover and cook until the cheese is melted and the chicken is cooked through, another 3–4 minutes. Serve hot.
