One of the most common dishes in Italian cuisine is chicken paired with soft Parmesan cheese. This dish is typically served with pasta cooked al dente. The chicken is baked in the oven rather than pan-fried, ensuring it remains juicy and flavorful. The baked cheese crust is a special and essential element of the dish. It doesn't take long to prepare, and the result is sure to impress.

Ingredients:

  • 2 chicken breasts, skinless and boneless (about 300 g each)
  • 1/4 tbsp. plus 1 tbsp. l. olive oil
  • 2 cloves garlic, finely chopped
  • 1/4 tsp red pepper flakes
  • 450 gr. tomato puree
  • 0.5 tbsp. plus 2 tbsp. l. grated Parmesan cheese
  • 1/4 cup shredded basil
  • 0.5 cups flour
  • 3 large eggs
  • 1 and 1/4 tbsp. grated Mozzarella cheese (about 170 gr.)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Slice the chicken breasts crosswise and lengthwise to form 4 thin, natural cutlets. Place them in plastic wrap and pound with a mallet or a heavy skillet to a thickness of 0.6 cm. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook for about 1 minute, until the garlic is softened.
  • Step 2
  • Add the tomato puree, pour 1 cup of water into the jar, rinse, and pour the contents into the pan. Simmer until the sauce thickens, about 10 minutes. Stir in 1/4 cup of Parmesan and basil. Spread half of the mixture over the bottom of a 3000 ml baking dish. Preheat the broiler or oven with the grill on.
  • Step 3
  • Meanwhile, combine the flour, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a shallow dish. Whisk the eggs with 1/4 cup Parmesan cheese in another shallow bowl. Heat 2 tablespoons olive oil in a frying pan over medium heat. Dredge 2 chicken cutlets in flour, shake off any excess flour, and dip them in the egg mixture. Carefully place them in the pan and fry until golden brown, 2-3 minutes per side.
  • Step 4
  • Place the cutlets in a baking dish. Add the remaining 2 tablespoons of olive oil to the pan and fry the remaining 2 chicken cutlets in the same manner. Then place them in the baking dish as well.
  • Step 5
  • Combine mozzarella and the remaining 2 tablespoons Parmesan in a separate bowl.

    Sprinkle the chicken with half the cheese mixture, top with the remaining sauce and remaining cheese mixture. Bake until the cheese is melted, about 2 minutes.
