Despite its fancy name, this dish is incredibly easy to prepare. If you have all the ingredients on hand, a bowl of delicious noodles will be on your table in 15-20 minutes. In fact, you won't find such a product as "lo mein" noodles in stores. You'll need thin egg noodles, yaki soba, spaghetti, or even fettuccine, cooked al dente and rinsed in cold water. Another tip: although sesame oil is a fat, think of it as a seasoning. It has an incredible aroma and flavor, but it's not suitable for frying. Add it to the sauce, and use a more neutral vegetable oil for frying.

Ingredients:

  • 3 tbsp (45 ml) oyster sauce
  • 1 tsp. sesame oil
  • 1 tbsp (15 ml) soy sauce
  • 1/4 cup (60 ml) chicken broth
  • 1 tbsp cornstarch
  • 3 tbsp (45 ml) vegetable oil, such as canola or peanut
  • 2 tsp (10 g) minced garlic
  • 1.5 tbsp (11 g) thinly sliced ​​ginger
  • 250 g boneless, skinless chicken breast or thighs, cut into thin strips
  • 3 cups (750 g) fresh lo mein noodles
  • 125 g young bok choy, roots trimmed
  • 3 green onions, cut into 4 cm pieces.
Substituting ingredients

Preparation:

    Step 1
  • To make the sauce, combine the oyster sauce, sesame oil, soy sauce, chicken broth, and cornstarch in a small bowl and set aside.
  • Step 2
  • Heat a wok or large heavy-bottomed skillet over high heat and add vegetable oil. Once you see wisps of white smoke, add the garlic and ginger and stir-fry until lightly browned and fragrant, about 20 seconds. Add the chicken and cook, stirring, for about 1 minute.
  • Step 3
  • Add the noodles and bok choy and cook, stirring, until the bok choy begins to soften and turn bright green, about 1 minute.
  • Step 4
  • Add the sauce and stir to coat all ingredients. Bring to a boil for about 1 minute.
  • Step 5
  • Cook, stirring, until the chicken is cooked through, about 1 minute more, and the sauce begins to bubble into a glaze. Sprinkle with green onions and serve immediately.

    There's no such thing as lo mein noodles, so don't try to find them in supermarkets. You're looking for egg noodles or pasta that are relatively thin and slightly firm. Some common names include lo mein, chow mein, egg noodles, or pansit noodles. Most markets carry chilled Japanese yaki-soba noodles, which are ideal. Spaghetti or fettuccine, cooked al dente, rinsed in cold water, and drained in a colander, also work well.
