The history of noodles in China goes back 4000 years, and to this day this dish is predominant in Chinese cuisine, especially in the northern regions. Chinese noodles are easy to prepare and served with meat dishes or sauces, and are included in the diet of the elderly and children.

Basic Chinese Noodle Recipe
- Wheat flour - 2 cups
- Water - 1/2 cup
- Salt - 1 teaspoon
Preparation
1. Knead a thick dough from flour and water. Cover with a cloth and let rest for 20 minutes. This allows the water to be evenly absorbed, making the dough pliable.
2. Roll the dough out with a rolling pin to a thickness of 1 mm. Roll in starch to prevent sticking.
A pasta machine can be used for rolling and cutting.
Chinese Egg Noodles Recipe
- Flour - 4 cups
- Starch - 4 tablespoons
- Eggs – 1 piece
- Salt - 1 teaspoon
- Water - 1 glass
- Water with soda - 1 teaspoon (weakens the flour proteins, retains moisture well by hydrating the starches, which results in a more flexible dough and a rigid structure).
Preparation
1. Beat the eggs until shiny, add and mix all the ingredients. Mix thoroughly until very stiff, then let sit for 20 minutes.
2. Roll out the dough on a dusted surface to a thickness of about 1 mm. Roll in starch and roll into a log. Cut the Chinese noodles to the desired width and apply more starch to prevent sticking.
Chinese Pan Mein Noodles Recipe
- Wheat flour - 600 grams
- Corn flour - 4 tablespoons
- Corn oil - 2 tablespoons
- Water - 4 tablespoons
- Eggs - 4 pieces
- Salt and pepper to taste
Preparation
1. Place the dough ingredients in a large mixer bowl and beat the eggs into the center.
2. Beat on medium speed until smooth, about 3 minutes. Let rest for 20 minutes.
3. Place the dough on a lightly floured surface and knead for 10 minutes until elastic. Cover with a damp towel and let rest for an hour.
4. Divide the dough into 10 pieces. Use a rolling pin or pasta machine to roll each piece to a thickness of 0.5 mm. Roll the dough into a log and cut the noodles into the desired width with a knife or scissors.
5. Place each portion of noodles in boiling water for 3 minutes. Rinse the noodles thoroughly in cold water and toss with a teaspoon of oil.
