Preparation:

    Step 1
  • Bring a pot of salted water to a boil. Add the noodles and cook for the amount of time indicated on the package. Reserve 3 tablespoons of the broth for the sauce, drain the rest, and rinse the noodles under cold water. Meanwhile, combine the soy sauce and oyster sauce in a small bowl. Place the pork in a separate bowl and toss with 1 tablespoon of the sauce mixture.
  • Step 2
  • Heat 1/2 tablespoon vegetable oil in a large skillet over medium-high heat. Add the eggs and cook, without stirring, until thickened, 1 minute. Flip the omelet and cook for another 30 seconds, then transfer to a cutting board and cut into strips.
  • Step 3
  • Add 2 tablespoons of vegetable oil to the same pan and heat gently. Then add the pork and fry, stirring constantly, until golden brown but not cooked through, about 2 minutes. Transfer the meat to a platter. Add the green onions, ginger, and garlic to the pan and fry, stirring constantly, for 30 seconds. Add the cabbage, carrots, and bell pepper and fry for another 4 minutes. Add the pork and noodles, 3 tablespoons of broth, and the remaining sauce mixture. Continue frying, stirring constantly, for about 2 more minutes. Add the omelet.
