Ingredients:
- 170 g of Lo Mein noodles, or any narrow wheat flour noodles
- 3 tablespoons soy sauce
- 2 tbsp. oyster sauce
- 2 pork chops, 2.5 cm thick (350 g), thinly sliced
- 2.5 tbsp. vegetable oil
- 2 large eggs, lightly beaten
- 1 bunch of green onions, cut into rings
- 1 tbsp finely chopped peeled ginger
- 2 cloves garlic, finely chopped
- 4 cups of salad mix of shredded vegetables (broccoli, red and white cabbage, carrots)
- 1 sweet pepper, sliced

- Step 1
- Bring a pot of salted water to a boil. Add the noodles and cook for the amount of time indicated on the package. Reserve 3 tablespoons of the broth for the sauce, drain the rest, and rinse the noodles under cold water. Meanwhile, combine the soy sauce and oyster sauce in a small bowl. Place the pork in a separate bowl and toss with 1 tablespoon of the sauce mixture. Step 2
- Heat 1/2 tablespoon vegetable oil in a large skillet over medium-high heat. Add the eggs and cook, without stirring, until thickened, 1 minute. Flip the omelet and cook for another 30 seconds, then transfer to a cutting board and cut into strips. Step 3
- Add 2 tablespoons of vegetable oil to the same pan and heat gently. Then add the pork and fry, stirring constantly, until golden brown but not cooked through, about 2 minutes. Transfer the meat to a platter. Add the green onions, ginger, and garlic to the pan and fry, stirring constantly, for 30 seconds. Add the cabbage, carrots, and bell pepper and fry for another 4 minutes. Add the pork and noodles, 3 tablespoons of broth, and the remaining sauce mixture. Continue frying, stirring constantly, for about 2 more minutes. Add the omelet.
