In this recipe, you can substitute spaghetti for Chinese chow mein noodles. It will be just as delicious, as the main ingredient is the Asian sauce made from peanut butter, rice vinegar, soy sauce, dark sesame oil, and jalapeño pepper (if you prefer a spicier flavor, you can leave a few seeds on the pepper). This sauce imbues the noodles with unique flavors. All the sauce ingredients are whisked together in a bowl, then the cooked noodles and fried ground pork with onions are mixed in. Serve with plenty of fresh herbs. Letting the noodles sit for a while allows the sauce to soak in, enhancing the flavor.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 340 g of minced pork
  • 340 g of Chinese chow mein noodles
  • 1/3 cup creamy peanut butter
  • 2 tbsp. l. rice vinegar
  • 1/4 cup soy sauce
  • 3 tablespoons dark sesame oil
  • 2 carrots, grated (about 3/4 cup)
  • 1 jalapeño, finely chopped (remove seeds for less heat)
  • 1 bunch of green onions (white parts separated from green parts)
  • 5 cm ginger root, peeled and chopped
  • 4 cloves garlic, crushed
  • 1/4 cup chopped fresh cilantro

Cooking the dish according to the recipe:


  1. Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions. Set aside 0.5 cups of the cooking liquid and discard the rest. In a large bowl, combine the peanut butter, vinegar, 2 tablespoons each of water and soy sauce, 1 tablespoon of sesame oil, carrots, and half of the jalapeño. Add the cooked noodles and toss to coat with the sauce.
  2. Meanwhile, heat the remaining 2 tablespoons sesame oil in a large skillet over medium heat. Add the white parts of the onion, ginger, and garlic; cook, stirring, until golden brown, about 2 minutes. Add the ground pork and cook, breaking it up with a wooden spoon, until darkened, about 5 minutes. Add the remaining 2 tablespoons soy sauce.

  3. Transfer the meat mixture to the bowl with the noodles. Add half of the green onions and cilantro and toss, adding enough of the reserved noodle water to thin the sauce. Serve with the remaining jalapeño, green onions, and cilantro.
