Ingredients:

  • 500 g lean ground beef (10% fat)
  • 800 g canned pureed tomatoes
  • 450 g black beans, rinsed and drained
  • 450 g red kidney beans, washed and dried
  • 450 g pinto beans, rinsed and drained
  • 1 tbsp. l. olive oil
  • 1 onion, diced (1 cup)
  • 1 red pepper, diced (1 cup)
  • 2 carrots, diced (1/2 cup)
  • 2 tsp ground cumin
  • 2 tbsp of water
  • 1 canned chipotle pepper in adobo sauce, seeds removed, pepper finely chopped
  • 2 tsp jarred adobo sauce
  • 1/2 tsp dried oregano
  • Salt and ground black pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat oil over medium heat in a large, heavy-bottomed saucepan. Add the onion, pepper, and carrot, cover, and cook, stirring occasionally, until the vegetables are softened, about 10 minutes. Add the cumin and cook, stirring, for about a minute. Add the ground beef and increase the heat to high.

    Brown the meat until it's no longer pink. Combine the contents of the pan with the tomatoes, chipotle pepper, adobo sauce, and oregano, adding salt and pepper to taste. Pour in water. Simmer over low heat with the lid slightly ajar, stirring occasionally, for 30 minutes. Add the beans and continue cooking for another 20 minutes. Season with salt and pepper.
    Exit: 10 tbsp.
