Thick, white, ribbon-shaped udon noodles are very popular in Japanese cuisine. They are made by rolling out a dough made from white wheat flour, salt, and water. They can be eaten hot or cold, making them a versatile ingredient in a wide variety of dishes, from hot soups to cold salads.

Where can I buy it?

Udon noodles are sold raw, uncooked, and dried. In Japan, the former is the most common variety.

Preparation

To cook udon, place the noodles in a pot of boiling water and bring the water back to a boil. Stir the noodles with a spoon, add more water, and bring the pot back to a boil. Reduce the heat and simmer until the noodles are tender. Drain the noodles in a colander and rinse with cold water.

Cold udon noodles are great served with sesame seeds, fresh ginger, dried seaweed, or wasabi. Hot, they're delicious with shrimp and vegetables. They can also be added to Asian-style soups.

In cooking, udon can be replaced with soba noodles.
