An essential recipe for Italian sauce.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/2 cup olive oil
  • 2 small onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 stalks celery, finely chopped
  • 2 carrots, peeled and finely chopped
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1800 g canned pureed tomatoes
  • 2 bay leaves

Cooking the dish according to the recipe:


  1. Heat oil in a large saucepan. Add the onion and garlic and cook for about 10 minutes, until the onion is translucent. Add the celery, carrots, and 1/2 teaspoon each of salt and pepper. Cook until the vegetables are tender, about 10 minutes.
  2. Add the pureed tomatoes, bay leaf and simmer, uncovered, over low heat until the sauce thickens, about 1 hour.

  3. Remove the bay leaf. Add salt and pepper to taste.

    The sauce can be made the day before. Cool and store tightly sealed in the refrigerator. Reheat before using.
