Khorasan wheat, or kamut, differs from regular wheat in its longer, golden grain. It takes a long time to cook, but develops a pleasantly firm texture and a warm, nutty flavor and aroma. Additionally, Khorasan wheat is rich in protein and vitamins, and contains significantly more fiber (10 grams per serving) than other grains. To serve it deliciously, simply boil it, mix it with Italian marinara sauce, and sprinkle with grated Parmesan cheese. The sauce is very easy to make, and you can even make it yourself. Combine canned tomato puree with sautéed garlic, add basil, and simmer until the flavors meld and the sauce thickens.

Ingredients:

  • 1 cup Khorasan (durum) or kamut hard wheat, sorted
  • 1 tbsp. l. olive oil
  • 2 cloves garlic, thinly sliced
  • A small pinch of red pepper flakes
  • 1 tbsp tomato paste
  • 1 can (425g) of canned plum tomatoes in their own juice, hand-mashed
  • A small handful of fresh basil leaves, plus extra for serving
  • 2 tbsp. l. grated parmesan
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Fill a medium saucepan two-thirds full with water and bring to a boil. Add the wheat and cook until the grains are tender but still firm, 55 minutes to 1 hour. Then drain.
  • Step 2
  • Meanwhile, in a medium skillet, add the olive oil, garlic, 1/2 teaspoon salt, and red pepper flakes over medium heat. Once the oil shimmers, stir until the garlic is golden, about 30 seconds. Add the tomato paste and stir until the oil turns yellow, about 30 seconds. Add the tomato puree and its juices, 1/2 cup water, and basil. Bring to a boil, reduce heat to medium-low, and simmer until the sauce thickens, 10-12 minutes.

  • Stir in the Khorasan wheat and transfer to a serving platter. Sprinkle with Parmesan and basil and serve hot.
