Green beans simmered in a quick homemade marinara sauce make a wonderful side dish for any meat or poultry. Before adding the beans to the sauce, blanch them in boiling water for a couple of minutes to soften them slightly while still retaining their bright green and crispy texture.


Ingredients:

  • 600 g of green beans
  • 3/4 tsp red pepper flakes
  • 1 can (800 g) of plum tomatoes
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Blanch 600 g (14 oz) green beans until tender; drain. Sauté 3 chopped garlic cloves and 3/4 teaspoon red pepper flakes in a skillet with olive oil.
  • Step 2
  • Grind 1 can of plum tomatoes (800g) into a frying pan, add a handful of basil and parsley, and sprinkle with sugar and salt to taste. Cook over low heat for 10 minutes.
  • Step 3
  • Add the beans, cover and simmer for 10 minutes, then remove the lid and cook for another 3 minutes to thicken the sauce.
