Browned butter is a great way to infuse simple green beans with a deep, rich, nutty flavor. This recipe adds a little oregano and red pepper flakes to the butter while browning it, adding a hint of heat and a hint of green. Toss it with blanched green beans and serve as an appetizer or side dish with any meat.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 700 g thin green beans, ends trimmed
  • 60 g unsalted butter
  • 1 sprig of oregano + 1.5 tsp finely chopped leaves
  • 1/4 tsp red pepper flakes + extra for serving
  • Flaked salt, for serving

Cooking the dish according to the recipe:


  1. Bring a large saucepan of salted water to a boil. Add the green beans and cook until crisp-tender, about 2 minutes. Drain and transfer the beans to a bowl of ice water. Let cool, then drain.
  2. In a large saucepan over medium heat, melt the butter. Add the oregano sprig and red pepper flakes. Cook, swirling the pan, until the butter is golden brown, 5-7 minutes. Add the green beans and 3/4 teaspoon coarse salt.

  3. Continue to cook, stirring, until the green beans are glazed, 2-3 minutes. Remove the oregano sprig, then add the oregano leaves to the pan and stir. Season with salt and red pepper flakes.
