Warm blanched green beans in flavorful oil with sautéed smoked ham and onions for a delicious side dish with meat or turkey. The beans should remain juicy and slightly crunchy, so don't overcook them. A beautiful bright green color is a sign that the beans are perfectly cooked.

Cooking the dish according to the recipe:
- Bring a large pot of water to a boil and add salt. Add the green beans and cook until crisp-tender, about 7 minutes. Drain, rinse under cold water, and pat dry with paper towels; set aside. Refrigerate the beans, covered, for up to 4 hours.
- Heat the olive oil in a large saucepan or Dutch oven over medium-high heat. Add the onion, season with salt, and cook, stirring occasionally, until softened and golden, about 8 minutes. Add the ham and continue cooking until heated through, about 2 minutes. Stir in the vinegar and remove from heat.
- Add the green beans to the pan and stir to heat through. Add the parsley and season with salt and pepper to taste.
