Beans in balsamic sauce acquire a rich and deep flavor, as if you've simmered them for hours instead of 20 minutes. To make it, use canned beans and simmer them in a tomato sauce with fried pancetta, spices, honey, and balsamic vinegar. The last two ingredients give the sauce a pleasant sweetness that contrasts beautifully with the spiciness of the red pepper and the smoky flavor of the pancetta.

In a small saucepan, fry 120g of diced pancetta until lightly crisp. Add 2 minced garlic cloves, 1 400g can of crushed tomatoes, and 1 cup of water; bring to a boil.
Stir in 2 x 14-ounce cans of rinsed white beans, 2 tablespoons each of honey and balsamic vinegar, 1 sprig of thyme, and a pinch of red pepper flakes. Simmer until thickened, about 20 minutes. Season with salt and sprinkle with finely chopped parsley.
