Ricotta, whipped in a food processor with honey and vanilla extract, turns into a delicious low-calorie cream in just a minute. Simply chill for a couple of hours and serve with berries. For the berry topping, sliced ​​strawberries are mixed with fresh basil and balsamic reduction. It's easy to make yourself using balsamic vinegar and sugar. Place the sauced strawberries on top of the ricotta cream and enjoy a healthy dessert filled with an unusual combination of intriguing Italian flavors.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 cup semi-skimmed ricotta
  • 2 tablespoons of honey
  • 0.5 tsp vanilla extract
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons of sugar
  • 450 g strawberries, hulled and quartered
  • 2 tablespoons fresh basil leaves, cut into strips

Cooking the dish according to the recipe:


  1. Place the ricotta, honey, and vanilla extract in a small bowl of a food processor and process until smooth, about 1 minute. Transfer to a small bowl and refrigerate for at least 2 hours.
  2. In a small saucepan, combine the balsamic vinegar and sugar and bring to a boil. Cook over medium heat for 2 minutes, stirring occasionally. Then cool completely.

  3. In a medium bowl, toss berries with basil and balsamic vinegar.
  4. Divide the cream among 4 cocktail glasses, top with the berry mixture and serve.
