A light and delicate Mediterranean-style ricotta spread with olive oil, honey, and thyme is a wonderful accompaniment to white wine. Before adding the honey, warm it and flavor it with fresh thyme leaves. Coarsely ground black pepper adds a touch of piquancy. Serve with crackers or crostini or toasted baguette slices.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1.5 cups fresh ricotta
  • 2 tablespoons of honey
  • 2 teaspoons whole fresh thyme leaves
  • 1 tbsp. l. olive oil
  • 1/4 teaspoon coarse sea salt
  • 1/8 tsp coarsely ground black pepper
  • Crostini, for serving

Cooking the dish according to the recipe:


  1. In a small skillet over medium-low heat, gently warm the honey and thyme until fragrant and the honey begins to simmer, about 4 minutes.
  2. Place the ricotta in a shallow serving dish. Drizzle the honey mixture over the ricotta. Drizzle with olive oil and season with salt and pepper to taste. Serve with crostini.
