A light and delicate Mediterranean-style ricotta spread with olive oil, honey, and thyme is a wonderful accompaniment to white wine. Before adding the honey, warm it and flavor it with fresh thyme leaves. Coarsely ground black pepper adds a touch of piquancy. Serve with crackers or crostini or toasted baguette slices.

Cooking the dish according to the recipe:
- In a small skillet over medium-low heat, gently warm the honey and thyme until fragrant and the honey begins to simmer, about 4 minutes.
