Cheese spread with pimento peppers

This thick cheese and mayonnaise spread is infused with refreshing pickled pimento peppers (also known as cherry peppers). The peppers are ground in a blender and blended with grated sharp cheddar cheese, then topped with a little mayonnaise for easy spreading. The flavor is savory, with sweet and tart notes. Spread it on sandwiches and burgers, or use it as a dip for tortilla chips, crackers, or chips.

In a blender or food processor, puree 1/3 cup chopped pimento peppers (drain the brine) until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and blend until smooth. Stir in 1/4 cup mayonnaise.
